Scarborough Fair Pesto 
This alternative to basil pesto will be music to your mouth. The quantities of the four herbs are approximations and you can vary their relative amounts to tailor the flavor to your preference.
~20 cloves garlic (preferably stiff-neck garlic)
~1/3 cup extra virgin olive oil (add more if necessary)
~1/2 cup toasted pinenuts
~1 cup loosely packed Italian parsley leaves
~1/3 cup loosely packed sage leaves
~4-5 4 inch sprigs of fresh rosemary, leaves removed from stem
~1 TBSP fresh thyme leaves
~1/2 cup grated parmesan cheese (preferably parmigiano reggiano)
Kosher salt
White pepper
A few drops balsamic vinegar
Put garlic, olive oil, and pinenuts into a food processor. Whir about 20 seconds. Add everything else and whir again. This is wonderful on pizza as an alternative to red sauce, makes a great dip for crusty bread or raw vegetables. It is also perfect for pasta and is delicious when spread under the skin of a chicken before roasting. |
